BAKED OMELETTE SPIRAL
8 eggs ( separated )
1 cup Almond milk
1/2 cup Bonnie's mix 1
1 / 2 each green and red pepper diced
8 slices Turkey Bacon ( baked and rough chopped )
3 green onions ( white ) chopped
2 tbsp green onion ( green tops ) chopped
1 tsp. parsley ( or dried italian seasoning )
1 cup Shredded Cheese of your choice ( Cheddar, provolone, mozzarella work )
1 cup Salsa ( warm in microwave about 15 seconds ) optional
2 avocados, sliced
fresh fruit as desired
salt and pepper to taste
LINE 15x10x1-inch baking pan with parchment paper
Beat egg whites until soft peaks form. Transfer to another bowl and set aside
Beat egg yolks and milk until well blended. Add flour and spices, and mix on low until incorporated. Fold in egg whites. Transfer to prepared pan. Sprinkle the peppers, onions and cheese evenly over the surface.
Bake at 350 for 15 - 18 minutes or until the center is set
Remove from oven, and roll up from the short end in a jelly roll fashion
Slice and serve with salsa and/ or sliced avocado and fresh fruit
CREPES SUZETTE ( FLAMBE OPTIONAL )
1 cup Bonnie's Mix II
2 eggs
3/4 cup almond milk
1/2 cup water
1/4 teaspoon salt
5 tablespoon butter, melted- divided
5 tablespoon coconut oil, melted - divided
4 tbsp xylitol - divided
2 tbsp orange juice concentrate
1 tsp vanilla or almond extract
Make batter at least 1 hour before serving ( preferably 2 hours or overnight )
Make in your blender. Start with eggs, milk, and water. Blend on medium. Turn off, add Bonnie's mix and 2 tbsp xylitol , then turn on low until smooth. While blender is still running, add the 2 tbsp melted butter and 2 tbsp coconut oil. Mixture should be very thin.
Cook crepes on a non-stick pan over medium high heat. Be sure to oil the pan lightly. Stack the crepes until all are made. ( can freeze or make one day ahead and refrigerate )
Make the sauce: in large pan melt the remaining butter and coconut oil, add in the remaining sugar, stir untl incorporated. Add orange juice concentrate and extracts. Bring to simmer, then add the crepes ( folded in half, then again to make triangles ) Simmer another 2 minutes until heated through. Serve with a garnish of orange zest and maybe a scoop of vanilla ice cream or some sherbert
