EASTER RECIPES

POUND CAKE
Bake  in lamb shaped pan or bake in bread pan

1 1/2 cup Bonnie Mix II
1 1/2 cup Xylitol/Stevia
1/2 cup butter ( soft ) or 1/4 cup each coconut oil and butter
1/2 cup sour cream ( or subsitute )
3 large eggs
pinch baking soda

Prepare your pan by oiling with butter/ coconut oil and dusting with some Mix or potato starch. Preheat oven to 375

Cream butter and sugar till light and fluffy. Mix in sour cream and soda. Mix in eggs one at a time, then pour into your pan. Bake about 60 minutes,or until center is set and knife inserted in center comes out clean

Let cool before removing from pan

MY FAVORITE CHEESECAKE WITH GENOISE CRUST

one recipe genoise baked in a sheet pan, cooled
2 springform pans, oiled and floured with Bonnies mix
4 packages cream cheese
1 cup sugar
3 eggs
1 tsp almond or vanilla extract ( I love a few drops of Fiori di Sicily )
1 tbps orange or tangerine zest ( clementines work too )
1 cup sour cream
heavy duty foil
baking pan large enough to hold 2 8" springform pans
hot water

Preheat oven to 325
In mixer bowl cream the sugar and cream cheese, then add the sour cream and flavorings. Add eggs one at a time, mixing just until combined. Pour into the springform pans. Put each pan on a piece of foil, and gather the foil up around the pans then place in baking pan and move to oven rack. Pour hot water in pan until the level is about half the height of the pans.
Bake 50 minutes ( do not use convection setting ) until center test tests clean
remove pans from water bath and cool completely, then wrap and refrigerate overnight before removing from pan. Totally worth the wait.


CHEDDAR AND SCALLION BSICUITS


2 cups Bonnies Mix 1
4 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon  sea salt
2 tablespoons butter
2 tablespoons coconut oil
1 cup cold buttermilk, or cold Thai coconut milk plus 1 tbsp lemon juice / vinegar
1/4 cup shredded cheddar ( or soy ) cheese
2 tbsp chopped scallions ( I use just the greens )
garlic powder/ paprika optional
1 or 2 large pieces of parchment
biscuit cutter or just use a drinking glass or tuna can

Preheat oven to 450 degrees

Easiest in food processor, but mixer ok too
Mix flour mix with butter and coconut oil. Combine until there are no lumps. Add in salt, soda and baking powder, then add the buttermilk. Finally stir in the cheese and scallions. 

On your work surface have a large piece of parchment with a bit of flour mix sprinkled on top. Scrape out the biscuit mix, and pat out to about 1 inch thick. You may need to add more flour to the top if still sticky or use another piece of parchement on top. Then cut out biscuits and tranfer to baking sheet with parchement.

Bake about 10 minutes. Enjoy
